Combine dry ingredients except for brown sugar.
Add oil, then milk, honey, and molasses.
In two batches, roll dough 1/8" thick (sprinkled with a little sorghum flour) between two sheets of wax paper.
Peel top paper off, place it back on, flip, remove other paper, and transfer to cookie sheet.
Cut squares. Sprinkle with cinnamon and brown sugar. Refrigerate.
Preheat oven to 350°F. Bake 15-20min.
