Ingredients

1/4 – 1/3 cup Coconut Flour 30g
1 cup Tapioca or Arrowroot Starch 128g
1 tsp Salt 6g
1/2 cup Olive Oil 108g
1/2 cup Warm Water 118.3g
1 Egg, Whisked 44g
Starch, to form balls** Optional

Preheat oven to 230°F. Grease or line cookie sheet. Starting with just 1/4 coconut flour, mix together dry ingredients. Stir in oil and water, then egg. Adjust coconut flour amount as needed to achieve a soft sticky dough. Coat hands with starch and form 10 balls. Bake 35min.
