Vanilla Cake with Fruit and Whipped Frosting

This traditionally Swedish dessert is perfect for summer - a fluffy vanilla cake layered with fruit and sweetened whipped cream.

    2 tsp Vanilla Extract 8.4g

    1 1/4 cups Flour 156.25g

    2 cups Heavy Cream 240g
    3/4 cup Sugar 150g
    1 tsp Vanilla Extract 4.2g
1-2 cups Fruit, like berries or fruit in syrup 184.5g

CAKE: Preheat to 350°F. Grease and line two 8-inch round pans. Whisk flour and baking powder and set aside. Cream butter, egg yolks, and sugar until fluffy. Add sour cream and vanilla, then egg whites (not pre-beat). Beat thoroughly. Alternate adding 1/3 the dry ingredients and 1/2 milk, mixing until smooth. Bake 25 min until toothpick comes out clean. Cool completely. FROSTING: Whip heavy cream, sugar, and vanilla until stiff. ASSEMBLY: Layer cake, frosting, fruit, cake, frosting, fruit. Do not frost sides.
