Ingredients

1/2 cup Buttermilk 122.5g
1/4 cup Dried, Unsweetened & Shredded Coconut 23.25g
1/4 cup Potato Flour 40g
1 tsp Baking Soda 4.6g
1/2 tsp Cream of Tartar 1.5g
1 Egg 44g
Pinch Salt 0.2g

Whisk dry ingredients together in a large bowl. Make a well. Mix in egg, oil, and gradually mix in buttermilk until batter is liquid but thick. Fry on hot oiled skillet, flipping mid-way.
