Sandwich Bread

Ingredients

Yields: 1 loaf (8 Servings)

1 cup millet flour 119g
1/2 cup sorghum flour 60.5g
1/2 cup cornstarch 64g
1/2 cup tapioca starch 64g
1/2 cup potato starch
2 tsp xanthan gum
1 1/2 tsp salt 9g
1/4 cup granulated sugar 50g
1 tbsp active dry yeast 12g
1 1/2 cup plus 2tbsp warm water 354.9g
2 tsp vegetable oil 9g

Sift dry ingredients and mix with water and oil until smooth. Pour into pan and cover with clean damp cloth or greased plastic wrap. Let rise 1hr. Preheat oven to 400°F. Grease 5x9 loaf pan. Bake 10min uncovered. Cover with foil and bake 40min or until loaf sounds hollow when tapped. Turn over on rack and cool completely.
