Cauliflower rice can be tossed raw into salads or served raw with a salsa-type spread, or can be cooked and used like rice.

PROCESSING In food processor or blender with ample water, process cauliflower florets in batches until pieces are sized like grains of rice. COOKING Fry in olive oil or butter over medium heat, covered, for 7min, stirring occasionally.
