2 Plantains 540g
3 tbsp Coconut Oil 40.8g
3 tbsps Maple Syrup 60g
1/4 cup Coconut Oil 54.5g
3 Eggs 132g
1 tbsp Coconut Milk 14.3g
3 tbsps Coconut Flour 22.5g
1-2 tsp Ground Cinnamon 3.9g
1 tsp Baking Powder 4.6g
Pinch Salt 0.2g

Preheat oven to 350°F. Line baking sheet with parchment. To peel the plantains, cut both ends off and slice length-wise. Heat 3tbsps coconut oil in a skillet and fry plantains 2-4 min per side. Transfer to food processor and puree. Add all remaining wet ingredients then all dry ingredients, processing until smooth each time. Use an ice-cream scoop to drop biscuits onto sheet. Bake 23min.
